They were pretty easy to make and they tasted great! Super spicy, too, which I hadn't anticipated. (I think it was all the garlic.) Didn't have time to make the enchilada sauce, though I did have the ingredients. It would have been vegan, even, but I can't not put cheese on top. We also had baked rigatoni with homemade sauce and a bunch of mozzarella. The sauce is easy to make and pretty dang tasty. It's the marinara sauce in the Veganomicon.

Good point. I wasn't sure about the copyright permissions and such, but this other blogger has provided not only the recipe, but helpful pictures, too! Same recipe.
