Favorite New Dish

I love to fry zucchini. The other day, I fried it in veggie stock instead of oil. Since I had eggplant and bok choy that needed to be eaten, I threw them in, too. It was surprisingly yummy! The last time I made it, I added leeks to the stock and then threw everything in. I guess that's not unlike the way to start a soup, so it's a great fall dish to lead me into colder weather and lots of soups! :D

I'm officially octo-lavo vegetarian now. I really don't want to inconvenience anyone and if I have to go without a meal or two sometimes (at parties and what-not), it's no big deal. I just can't consume meat anymore: I've lost all interest in it. Yes, that includes bacon and meat cheeseburgers! I never thought I'd want to give them up, but I was wrong. Ideally, I want to eat as many veggies as possible and lots of good whole grains. Realistically, I still eat lots of quesadillas and fast food (it's so convenient some times!).

It's pretty cool, though, how the more veggies you eat the more you enjoy them and the less you enjoy everything else. What a pleasant feedback loop!
